This Ramen Noodle Salad is a make ahead cole slaw, made with broccoli slaw and ramen noodles, that is perfect for a side dish for a potluck, bbq, or picnic.

We recently moved from Houston to San Antonio, Texas. And after this move, we have decided that we never ever want to move again! Ever!  And as far as moves go, it went pretty smoothly, it is just such a hassle that we would prefer not to do it again.

It is hard to leave family and friends behind. However, I feel like I moved back home because I grew up in San Antonio. I still have friends here and many more old friends with whom I need to get back in touch.

However, my family is scattered across the state and across the country. So I was very happy when I found out that my brother and sisters were coming back to San Antonio for conferences and reunions. Since we were all going to be in the same town at the same time, they had to come to our house for a family reunion. I love how these things work out!

Ramen Noodle Salad (with Broccoli Slaw)

I needed to start planning the menu. I bought a new grill. So I knew we would bbq. Therefore, I needed some sides.

I don’t know about you, but when we have people over, I don’t want to be messing with the food while everyone is here. I want to enjoy the party. And since it has been 4 years since all of us were at the same place at the same time, I can’t waste any precious time.

That is why I like dishes like Bacon Broccoli Tortellini Salad, Greek Potato Salad, Cajun Honey Jalapeno Slaw, and this Ramen Noodle Salad, that I can make ahead of time and during the party, everyone can help themselves. Easy Peasy!

Ramen Noodle Salad (with Broccoli Slaw)

Traditionally, the Ramen Noodle Salad calls for a cole slaw mix. However, I prefer the crunchy texture, taste, and nutrition of broccoli slaw, so I use that instead.

What makes this salad unique is the addition of ramen noodles. Some people use the Ramen noodle seasoning packet that comes with the Ramen noodles and some don’t.

I sent my husband to the store for the ramen noodles. (Yes I know. I should have known better.)  He came back with every flavor packet except the one I needed.

However, no worries. If you don’t have the exact ingredient you want but have something similar, just adjust. That’s what I did. I changed up the salad and instead of using the Oriental Ramen seasoning packet, I used the Ramen roasted chicken seasoning packet. It worked.

In addition, I only had red wine vinegar and sherry vinegar so I decided to give the salad a twist by using the sherry vinegar. I recommend using whichever vinegar you have on hand. If you have white wine vinegar or apple cider vinegar, either one would work.

To also give my Ramen Noodle Salad a little twist, I added thin slices of sweet red bell peppers and added chopped green onions to give it some color, and almonds for a little crunch.
